Hi! Nice to meet you.

I’m Anetta, pronounced like “uh-net-uh.” If you call me Anita or Annette I’ll cry.

I’m a food enthusiast, business professional, amateur food photographer, and a blogger. Among other things.

I love to cook quick, easy, and healthy meals inspired by places all around the world. I started this blog to share my recipes and hopefully inspire others to get in the kitchen!

By day, I manage a program which works with older adults to maintain their independence as they age. By night, I cook!

I cook and blog about a wide variety of foods. I love to develop recipes that are not only delicious, but are also approachable. We all have to start somewhere, so I try to provide lots of method descriptions in my posts for those that are new to the kitchen. If I don’t explain something well, leave me a comment and I’ll help you out!

I also recognize that not everyone has access to hard-to-find ingredients or kitchen gadgets, so I try to provide easy substitutions if a recipe calls for a particular ingredient or tool that you may not have.

My husband and I have been fortunate to travel to Asia, South America, and Central America over the past couple years, so much of my recipe inspiration comes from our experiences abroad. Hands down, Thai Food is my favorite thing to eat on the planet.

Since I work full time I tend to gravitate towards meals that can be prepared very quickly (under 30 minutes is my standard!).

I don’t know if this is the correct place to post a recipe or not, but…I took some salted and peppered Tilapia filets and laid them in a pyrex cooking dish sprayed with non-stick spray On top of them I placed sautéed red pepper and onion splashed with balsamic vinegar. I crumbled a little Mexican cheese over the top and baked. Before serving I garnished with chopped avocado and coarsely chopped cilantro. I served it with lime wedges.

    • That sounds delicious! Tilapia is one of my favorite fish to cook with because it really absorbs the flavors of whatever it is cooked with (plus, it’s cheap!). I’ve been learning more about Mexican cheeses lately – what kind did you use? I’ve been buying cotija and oaxaca pretty regularly and they are both delicious.
